Gluten-Free Cornflake Cookies

Gluten-free cornflake cookies are a simple sugar cookie with a crunchy surprise. These cookies are perfect for anyone who is on the GFCF (Gluten-free / Casein Free) diet and the cookies are sensory friendly as well. They are simple and quick to make and are the perfect snack for afterschool. This is also one of my husband’s favorite cookies. I hope you enjoy the recipe!

When making these cookies, be sure to use a gluten-free cornflake cereal such as Nature’s Path. Corn is gluten-free but additives in the cereal may not be, so it is important that the cereal say gluten-free. Buying organic will ensure that the cereal is GMO free as well because most corn grown in the United States is genetically modified.

Ingredients for gluten-free cornflake cookies.

To make 24 gluten-free cornflake cookies you will need:

  • A cookie sheet lined with a silicon baking mat or parchment paper

  • 1/2 cup ghee

  • 1/2 cup sugar

  • 1 egg

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 1/4 cup gluten-free all-purpose baking flour

  • 1 cup gluten-free cornflake cereal

  • 1/2 teaspoon xanthan gum if NOT already in your baking flour. If in doubt leave it out.

How to make the cornflake cookie dough.

Preheat the oven to 375℉ and line a cookie sheet with a silicon baking mat or parchment paper. In a large mixing bowl, add the butter, sugar, and egg and cream together.

Add baking powder, salt, gluten-free all-purpose blend, and 1/2 cup of the cornflakes to the mixture. Add xanthan gum if it is not already in your flour blend. When in doubt, leave it out. Too much xanthan gum will make a dough unworkable and thick. Stir until well combined. Dough will be stiff.

Add the remaining 1/2 cup of cornflakes to your dough and mix well. Roll into 1" balls and slightly flatten them. Place 2 inches apart on the baking sheet. Bake for 12-15 minutes or until the edges are lightly browned.

These cornflake crunchy cookies make the perfect breakfast cookie or afternoon snack on the go for busy families.

  7. Let cookies cool on baking sheet for 5 minutes before transferring to wire rack to cool completely.
